Iain McPherson have worked in the industry for over 10 years, previously managing the award wining cocktail bar The Voodoo Rooms and then my opening Is own bar , Panda & Sons currently 32 on 50 Best Bars and nominated Best International High Volume Cocktail Bar at Tales of The Cocktail 2020.
Iain is the only person in Scotland to have won Diageo World Class and Bacardi Legacy Scottish finals in the same year and also won UK Gin Connoissuer in 2012 with the highest blind tasting global score and nonetheless he is also the creator of the “Switching Technique”: a method of fractional concentration replacing water in spirits with another non-alcoholic liquid which involves a complex process of freezing the spirit to a specific, differing temperature to split its water content.
