Giovanni Graziadei, Jigger & Pony’s Bar Operations Manager hailing from Torino, Italy, first fell in
love with bartending while he was at university. Upon realising how much knowledge goes into
making a drink, and the history behind each drink, Giovanni found himself continuing his bartending
journey in London. At Jigger & Pony, Giovanni hopes to share his deep-rooted understanding of
classic cocktails, as well as his veneration for the history in each and every cocktail.
Giovanni’s mastery brings an added dimension and depth to the menu at Jigger & Pony. He is one of
the main driving forces behind the menu-zine development. Through his experience in London’s
Blind Pig, and subsequently, Head Bartender at London’s award-winning 69 Colebrooke Row, these
bars honed his technique, creative process and knowledge behind the makings of both classic and
modern cocktails.
At Jigger & Pony, Giovanni hopes to be able to impart his expertise on how each and every
ingredient is complex in its own way. He believes that creating cocktails is also about deeply
understanding every single ingredient and how they interact with each other – from the various
facets of a given ingredient, to picking the best ones to use in a particular drink.
To Giovanni, the art of cocktail-making should be elegant, clean and effortless. In line with the bar’s
reputation for convivial hospitality and the showcase of cocktail craft, his unique take on cocktails will
undoubtedly help to elevate the award-winning bar’s programme. His love for classic craft cocktails
allows him to think creatively, but also adapt to different drinkers’ needs and preferences. At Jigger &
Pony, Giovanni also hopes to share his experiences with the bar team in order to continuously improve the bar experience and its team in years to come.
