The first written references of this cocktail are from the 1940s but since his name may refer to the actual airmail, which began flying mail in 1918, we are encouraged to believe it was born earlier.
A classic Air Mail cocktail would be served in a highball glass over ice, but this is Valentino’s personal twist on it, who also selected Havana Club Añejo Blanco as the perfect rum for his revisitation.
Havana Club Añejo Blanco is distilled and aged in Puerto Rico under the Caribbean sun for 1 year in oak barrels in which aged rums are blended together. The blend is aged for a second period in oak barrels for at least 2 months. This process provides to it notes of vanilla and brown sugar with mineral and light fruit notes, such as pineapple, dried papaya, raisins which perfectly combine with the homemade spiced syrup Valentino created for this cocktail.
