Derek Stilmann

Born and raised in Miami, Florida and a graduate from FIU with a Bachelors in Hospitality Management, Derek Stillman has been in the hospitality industry for over 14 years, and have worked in almost every position from the back of the house to the front of the house. Over his career he had the opportunity to open a few of his own concepts in Miami including the newest to the list Bar Kaiju. Derek Stillman focus on conceptualising and creating ideas from the ground up and bringing them to life, creating small little worlds for himself, his team, and his guests to enjoy and explore. He has always been very passionate about food and beverage, he believes it to be his connection to the world, through flavour, culture, and tradition, as well as a love for all things fermented. One of my goals is to create a more sustainable environment for my teams and for my industry as a whole.
